I am a very picky eater and one who does not like to try new foods. At every restaurant that I go to I have something that I like and I always order the same thing. Yes a lot of people think I am crazy but if you know what you like why risk ordering something different and finding out you do not like it.
So when people started talking to me about quinoa I would listen and know that I would never try it. Well according to everyone the health benefits were out of this world so on day I just happened to see this quinoa at Costco and decided to just dive in and try it.
The first few times I was not too happy with the way I made it. I have a large group to feed so I decided to triple the recipe and did not add anything to it. Do not triple the recipe without making adjustments it was too mushy and no one was to happy.
Then I talked to the trainer at my gym (he also loves to cook) and he told me how to fix it. I am going to tell you how he does it.
First it is really easy. Now I just double the recipe and use a little less water. While it is cooking I chop up all the vegetables. I add onion, celery, peppers of any color whatever I happen to have. I also love this garlic from Costco it is very flavorful and ready to use. Of course if you buy this large jar you need to use a lot and I put it in just about everything.
So back to the quinoa, I put at least 2 tablespoons of garlic in, then I add balsamic vinegar and olive oil; just about 2 tablespoons of olive oil and about ¼ cup of balsamic vinegar. I never really measure anything when it comes to adding the spices so I can’t really tell you how much.
Mix it all up and then chill it and you are ready to serve. Usually I don’t get around to cooking it until right before dinner so I just put it in the freezer for about 15 min. while I finish fixing everything else. This is really good served with grilled salmon and broccoli.
Have it before the summer is over for a really light summer meal.
